see, cauliflower isn’t so bad…

I’ll admit, I was a little wary serving something with cauliflower in it…  The last time I did, Andrew and I got into a screaming match over whether I HAD or HAD NOT made vegetable korma (with cauliflower) knowing he’d hate it.  (Truth:  I never make anything I know he’ll abhor.  I do, however, make things that include ingredients he doesn’t care for.  In all honesty, I didn’t like the vegetable korma, either.)

I (finally!) made kale chips.  Andrew LOVED them.  LOVED.  I have to admit, I didn’t.  I think it was a texture thing.  They got so crisp that they kind of disintegrated as you bit into them, which I didn’t like.  If that isn’t the texture I’m going for, someone let me know!

(BTW, I’m whipping this up at 5 a.m. before I head the gym…Hadrian decided it was time to get up at 4 a.m. and after making Andrew take him out–hey, he had three more hours to sleep compared to my ONE–I decided to cut my losses and just get up.  That, and Odie was making too much noise licking plastic…)

I reheated the second loaf of sourdough in the over.  No, we didn’t go through a whole one last night, but after lunches today, there wasn’t much left!  I made the BEST muenster and mushroom grilled sandwich yesterday for lunch 🙂

And…the grand finale:  Baked Italian-Style Cauliflower, found in Cooking Light this month.  I’m telling you, it was fate.  I needed a recipe with beef, so I looked that up in the index (isn’t it neat magazines have indexes?) and wouldn’t you know, I just happened to have leftover cauliflower on hand, too.  I find there are some dishes I make that require some ‘advance planning’ to use up all the ingredients, mostly with cabbage.  I mean, just one cabbage produces SO MUCH (often I only need half or a quarter of one) and usually I need one of each COLOR, so when I meal-plan now, I think ahead and pick meals that I can re-use leftovers.  So, when I make coleslaw, I often make this one dish of slightly sweet/hot sauteed red cabbage to serve with pork.

Anyway, back to dinner.  I loved it!  And Andrew thought it was pretty good, too.  I have to admit, I’m not sure I’m going to save the recipe; the binder is reserved for AWESOME meals only (I just have too many to try to keep ALL of the decent ones–and post on recipe binders coming soon!) but it’s not hard to remember this.  Basically, steam some cauliflower, top with spaghetti sauce cooked with a little bit of beef, onion and garlic (it was supposed to have olives, but I left those out until the end and added them to my half, as well as mushrooms I had on hand, too), then top with breadcrumbs and cheese. Broil four minutes.  I thought it was incredibly flavorful and an awesome (and healthy!) way to eat cauliflower.  It made four servings; 300 calories each.  (Can you see I only put cheese on MY half??  I’m such a nice wife.)

I opened a Shiraz from my last trip to Trader Joe’s.  This was the perfect meal for red.

And this is the olive oil Andrew has fallen head over heels for.  I chose it last time I was at Wegmans because it’s nice but not ‘break the bank’ nice.  And I know Ina used olive oil made from California olives, so I thought I’d give it a whirl.  Andrew noticed right away as he uses it to dip with herbs for bread, which made me happy.  Score one for me!  (He says he’s a “supertaster,” which does exist–we learned about it in psych of all classes–but I don’t agree.  While he does have a knack for guessing particular flavors, supertasters often find things like broccoli too bitter, which he doesn’t.  I think he’s just picky.)

Our pretty table 🙂  However, all this table-photographing makes me feel like Semi-Homemade with Sandra Lee and her ‘tablescapes.’  Ahh, gag me with a spoon.  I hate that show…

I even went all-out and lit some tea lights.  Note to self: dust next time!

Here’s the recipe–it was under “Budget Cooking,” which I think is a great idea for a monthly magazine.  Only $2.50 per serving.  See, you can eat healthily, use REAL food and not break the bank.  I’m sure if you search Cooking Light for the recipe you’ll find it–I’m pressed for time so I need to wrap this up!  BTW, Cooking Light is doing a year-long series (that just started this month) on the ‘Best 100 Cookbooks’ for their 15th (or is it 25th?) anniversary.  I like the magazine enough, anyway (I grabbed this month’s after seeing their ginger pumpkin pie on the cover), so I subscribed…  I LOVE cookbooks and I knew I wouldn’t remember to buy it off the newsstand–not to mention it’s $5 a pop!–so I got it for $1 each instead.  🙂  I didn’t want to miss their cookbook reviews!

And the kale chips–Kath makes them all the time, and Susy is a big fan, too, so I had to give them a try.  Susy gave me Tyler Florence’s Family Meal cookbook (below) and I treasure it.  Every time I look at it I think of her.  Miss you!

 

more than live-able, but not quite ‘home’

At last, a ‘real’ post!  I love that I’ve been able to post quick things from my iPhone, but nothing beats a good ‘ole picture-filled narrative!

I don’t quite feel like I’ve gotten my head above water yet (Andrew is gone this weekend and I had high hopes for being a crazy-productive person in all sorts of ways, yet I never get as much done as I want to…); I’m in the middle of a bunch of random things:

-finishing up an article for the Advertiser

-studying

-need to start Chemistry homework

-baking bread

-“feeding” my sourdough starter I got from King Arthur Flour on Friday

-making meatballs to freeze

-Bible Study

-dishes BY HAND (our dishwasher is less-than-satisfactory)

-unpacking

-giving myself a mani/pedi (I am in DESPERATE need)

-and the MYRIAD unreturned phone calls, emails and letters I need to address….

So, until tonight after I’ve made a bit more progress on the above, I’ll probably feel a bit discombobulated.  That word is so fitting.  (Before anyone can say it, yes, I know I bring a lot of these ‘tasks’ on myself.  I can’t help it…)

Did I mention I totally forgot today was the time change?  Good thing my uber-smart alarm clock changed automatically…

Anyway, here is the much-anticipated (or not, depending upon how you feel about it…) photo montage of the new place.  Disclaimer:  It isn’t clean.  It isn’t organized.  I basically snapped a bunch of photos this morning once the sun started coming up.

We’re pretty much unpacked, at least the things we’ll need for the near term.  This move was certainly a challenge; we knew going into it that our stuff would be in storage, which means bringing A LOT with us, and then now going into a rental, we’re faced with moving twice.  So, we’ve basically unpacked and re-packed A LOT.

Dining Room:

-took the three shelves from the office and combined them to form a larger one with the corner units on each side to hold linens, salt and pepper shakers and knick-knacky things

Kitchen:

-As I said, I’m in the middle of a bunch of baking projects, so it’s a bit messy

-I don’t have a lot of counter space; that’s been the biggest challenge

-But, I got my white cabinets!  Ha!

The “paneled” room:

-This room is off the kitchen and we’re putting the computer and the printer (once we find it) there

-Our bigger red couch didn’t fit through either door into the living room, so it’s living here for now

-On the left is a sliding door out to a screened-in patio and I also have a small bookcase with my food items, since the kitchen is only big enough for my “stuff”

“Pepto-Bismol Pink Pet” room:

-This room hold’s Hadrian’s crate, the kitty stuff and Andrew’s closet.  Hi Odie!

Guest room:

-Coincidentally, it’s painted almost the same color as in our house in Ohio, so everything looks very nice

-I stayed up until 12:30 unpacking and making the bed in there; it’s almost finished and ready for Emily and Dan, who are visiting in TWO WEEKS!

-I’m also going to set up a desk in there for quiet studying (I do my homework in the dining room) and keep my craft and mailing supplies in the closet

Our bedroom:

-It’s only slightly less pink, and I had plans (and all the supplies!) to paint, but I’ll be honest–my enthusiasm is waning.  IF it gets done, it won’t be until Christmas break, at the earliest.

-There is only room for one nightstand (so I get it) and it makes sense, since I’m the last one in bed and definitely the first one out every morning (hello 5 a.m. school mornings!)

Moving on to the basement–you’ll see why Andrew and I were thrilled with it.  It’s giant and warm and dry, which is important since it holds all our stuff!

My kitchen “goodies:”

-I set up some chrome shelving in the basement near the stairs to hold my appliances.  I placed the most-used ones near the top since I can grab them without going all the way to the bottom…I’m so smart 🙂

-Don’t you just love my colorful Le Creuset shelf??  I do…

Laundry area:

-I have a line (sweet!) to hang my running stuff and plenty of shelves

-I’ll be honest; between my washer and dryer at home and the HE ones at the hotel (however grody they were), I’ve gotten spoiled by the front load/HE washers and dryers.  These, while relatively new, just are not as good.  Seriously people, HE really is a HUGE difference

These are all the re-packed boxes–basically we opened them, took stuff out and re-packed and labelled what we didn’t need or want out right now.  All my fun dishes are in there, and lots of decoration items.

And our rubbermaid tub collection!  Most are “memories,” like boxes of yearbooks, trophies–you know, the things you can’t really part with, but what the heck do you do with them things, and other stuff, like camping and canning equipment, as well as Christmas decorations and miscellaneous furniture.

It’s a work in progress; I feel like the basement could be better organized and the upstairs still doesn’t feel very ‘homey,’ whether it’s decorated or not.  Maybe once Andrew actually unpacked his clothes it will…

in case you were wondering, i’m still alive…

…but just barely!

It’s been a BUSY couple of days, and I still don’t really feel like I have my head above water yet.  Here’s the run-down (but no pics of the house yet, sorry):

1.  Move-in day went well; I insisted we do an inventory while they unloaded the truck and I’m glad we did.  We definitely got all our stuff and it was all in really good shape; I was SHOCKED.

2.  I have schoolwork coming out my ears; I took a test Thursday night and Friday afternoon, both of which went well and I believe I did quite well.  That chemistry quiz I was dreading Saturday morning?  Definitely got a 76%…boo!  But, the guy who sits behind me got a 64%, which made me feel (a bit) better.  At least the lowest two quiz grades get dropped…

3. Today is my “day off,” except that it’s almost 4 p.m. and I haven’t done any schoolwork yet.  How does this happen?

4.  I ran outside for the first time today at our new place.  I didn’t map a route beforehand, so I just kinda ran all over.  I hate doing that.  I like having a plan (ain’t that the truth?!).

5.  I also cooked for the first time since arriving at our new place: fried rice, made with brown rice!  Andrew came home with lunch and I made it to pair with our leftover Chinese.

6.  All this eating out (hello, the ENTIRE time since we arrived in NY back in June) has NOT been good for me.  I’ve (sadly) gained a few pounds back in the recent month or so–thankfully nothing too major–but I need to get back on the bandwagon, and STAT!

7.  Hadrian slept on his bed in the living room last night for the first time ever.  (He normally sleeps on his bed in our room.) Weird…

8.  The cats are settling in alright…  I’m really trying to crack-down on Hadrian’s barking/trying to play with them, and they don’t seem too shaken up.  The biggest challenge is how to feed them without Hadrian getting at the food.  So far I’m experimenting with feeding them twice a day (like you would a dog), and doing it when I leave in the morning (Hadrian is in his crate) or locking them in the bathroom in the afternoons or something.  They were pretty hungry by this afternoon…

9.  I ran errands in East Aurora today, so I asked a friend for coffee who I hadn’t seen in awhile.  We went to Taste, and I could not resist this:  black forest cake and a cherry italian soda.  Hence the weight re-gain…

10.  I’m hoping to get back into a more regular “routine” soon–both for blogging and working out and doing schoolwork.  And eating better.  My sweet tooth is out of control!  The house is somewhat “unpacked,” so once we get things a bit more organized, I’ll get some photos up and hopefully will be back on here more regularly.
