I’m a foodie, exercise enthusiast, wanna-be nutrition writer, total clean freak and I have a serious sweet tooth. I’m also a Registered Dietitian.
In 2011, I started blogging at thefrozenpineapple.com about life, food, our move to New York and my journey back to school to become an RD. Now that I’m a Registered Dietitian, I decided to add more of a food and nutrition focus to the blog, hence it’s now the ‘healthy’ pineapple.
My interest in nutrition started after college (Penn State, Journalism 2005) when I taught myself how to cook, with a little help from the Food Network, and got healthier by eating well. I spent four years as a Public Affairs Officer in the United States Air Force, but my interest in food and fitness only grew. After I got out of the military, I had no idea what I wanted to do with the rest of my life—and then it hit me: I wanted to be a food and nutrition writer!
After moving to my husband’s hometown of East Aurora, NY, I went back to school and graduated with my Nutrition and Dietetics degree from Buffalo State College in 2015. I’ve worked in nutrition counseling, acute and long-term care settings as an RD, and I teach fitness classes at the Southtowns YMCA. I also write a monthly nutrition column for our local paper, the East Aurora Advertiser. I’m currently trying to make all my #careergoals come true and break into the world of freelance writing!
This blog encompasses many aspects of my life in addition to food & nutrition, including the globetrotting trips my husband and I take, and our crazy home-improvement projects. For more about each category, click here.

I no longer live in Buffalo (I moved to State College!!! in August), but was there for my dietetic internship at UB. I’m now at Penn State doing my PhD in Nutrition, so we’re kind of reserve buddies.

I completed my undergrad at Eastern Illinois and now I am doing my internship through Murray State University. My internship is going really well so far. I am in my 7th week of my clinical rotation. I’ve already completed food service and community. I’ll be finished in May! 🙂 I’m enjoying it all for the most part! I just can’t wait to have RD behind my name.
That sounds awesome! How did you find out about your internship? Buffalo State offers a competitive, coordinated program that includes the internship, which is what I’m hoping to do. When I went online, I didn’t see much (other than some programs through local schools) in our area that offered anything accepted by the ADA.

I just found your blog and needed to comment because I’m considering doing the EXACT same thing. I graduated last year with a BA in journalism and realized down the line that I do not want to be a reporter (but I finished my degree anyway). I really think writing has always been just a hobby of mine and always something I’ve enjoyed doing.
Anyways, I’ve decided I want to go back to school to do nursing or become an RD. I’m trying to register for pre-req classes (because I have a lot to take!), but the community colleges around my area (California) are all super full of ppl trying to do the same thing that the classes are already full for Fall 2012…so I guess I’m just going to have to wait.
Was wondering if you have any advice! 🙂
Hi! I’m SO SORRY it’s taken me so long to get back to you; your comment got lost in my ‘pending’ folder! I think it’s great you’ve found out a little more about yourself (that you DON’T want to be a reporter) and that you’re brave enough to do something about it. I remember in my last year of school thinking, “Why didn’t I go to school for nutrition??” And making the decision to go back to school is a big one, but I haven’t regretted it. In fact, I am really enjoying it. I just went to my orientation here and am excited for what’s next. Are the community colleges around you really that full?? I knew dietetics was gaining in popularity, but didn’t realize how much. Nursing is always popular; I was in a lot of classes with nursing people at my community college. The first thing I would do is decide what your “dream” job would be, and then work toward that. Don’t go into nursing because you think it’s what you want–it’s hard! My dream job is to be a health food writer–thus combining the two degrees–so I’m working toward becoming an RD, knowing that as an RD, a lot of other job opportunities will be open to me as well if my interest or priorities change.
So, what’s YOUR dream job? 🙂
