i had an idea…

…and it was a yummy one!

A couple days ago, as I was packing Andrew’s lunch (yes, just one of the gazillion things I said I’d never do) all I had left in the bottom of the Julio’s chips bag was a bunch of crumbs.

And immediately, I thought of a mexican breakfast/egg dish kind of thing.  Why?  No idea.

I held onto the bag of crumbs and finally made my concoction this morning, sauteeing onion and red bell pepper with the eggs, and added leftover chorizo (score!), some salsa, avocado, green onion and monterey jack cheese.  All this atop Julio’s seasoned chips.  Just delightful.

I kept it light be serving just these on the side:

Strawberries and half an orange.  Just delightful 🙂

Happy Wednesday afternoon!  I’m making some King Arthur Flour’s Banana Chocolate Chip Squares (another blogger was nice enough to type up the recipe) to bring to the co-op‘s first annual meeting (!!!!) tomorrow night, and will be continuing The Hunger Games.

Oh, and do any of you like radishes?  I admit I’m not a huge fan, but after writing my latest ‘Eat This’ column for the co-op’s blog, I think I might give them another try.

Does life get better than an afternoon of baking and reading, all after having had a great workout and painting my toes?

No, this isn’t MY breakfast.  It’s Andrew’s.  And he made it HIMSELF.

It’s a homemade waffle spread with natural peanut butter, topped with banana slices and a drizzle of real maple syrup.

Me thinks my favorite breakfasts might be catching on…

fabulous, fun-filled Friday

Yesterday was pretty darn good.

Let’s just say that one of the first things Emily and I discussed when we met up for lunch yesterday was cupcakes.  She was jonesing for one, and I knew just the place 🙂  Emily had never been to East Aurora before, so we’ve been meaning to have an ‘East Aurora date’ for awhile now.  Thankfully, we were blessed with some of the best weather of the year and freedom from school schedules.  We ate lunch outside at Arriba, walked all over the village, got iced coffees at Taste and popped into Vidler’s.  To close our fun-filled day, we made our way to Firefly, where I tried the ‘Trevoreo’ and she got the Key Lime.  Heaven, I tell you.

As usual, I’m wishing I’d taken photos so I could blog about everything, but thankfully this time someone else did it for me!  Emily is also a blogger (and dietetics student at Buff State), so click here to check out our day!

And as if I hadn’t had enough blissful enjoyment of quaint East Aurora for one day, Andrew and I dined on the patio at Rick’s on Main to celebrate my semester well done.  If only we’d had room for Kone King on our way out of town…

We’re prepping for a last-minute camping trip tonight with Andrew’s friends from work (which has thrown me into a tizzy that I’m trying to shake off as we speak), and looking forward to spending some quality time together on my first Saturday with no school!
